Nutraceuticals and foods of interestExpertise in Food Chemistry and Biochemistry, with focus in protein biochemistry and proteomics. Current research interests are food bioactive substances and their interaction with human health, with special reference to infant food and special food for clinical nutrition. She coordinate a research group, whose activities are mainly aimed at the study of the protein fraction of human, cow’s and donkey milk for infant nutrition and at food allergen discovery and characterization.
