Research Interest and expertise in the field of nutraceuticals and functional food
Metabolomics of food matrixes, vegetable extracts, and biofluids (urine). An analytical protocol based on high-resolution NMR spectroscopy and appropriate multivariate statistical analysis has been developed for the identification and quantification of metabolites in leafy vegetables (chicory, endives, lettuce), fruits (apple, kiwifruit, peach, blueberry, tomato), honey, Royal jelly, tee, saffron, olive oil. NMR spectroscopic identification of food biomarkers in urine.
