Research Interest and expertise in the field of nutraceuticals and functional food
The main research interest is on polyphenols in vegetable matrices of Mediterranean area and their effect as Nutraceuticals, and as components of Functional Foods. The activities are on the recovery and analysis of biophenols from agro-industrial by-products; their bioaccessibility and bioavailability by in-vitro gastro-intestinal digestion static and/or dynamic coupled with cellular models, and the biological activities evaluation of biocompounds, functional and functionalized foods.
