Research Interest and expertise in the field of nutraceuticals and functional food
Mucosal Immunology and Immune Nutrition - Use of cellular bioassay based on human intestinal or blood T lymphocytes to assess: - immunostimulatory properties of dietary proteins. - in vitro and pre-clinical validation of enzymatic, biochemical and immunological strategies to detoxify food proteins. - impact of environmental contaminants, such as plastic derivatives, on human health, in particular on the differentiation, maturation and functionality of immune cells.

Keywords: Immune nutrition, cellular bioassay, plastic contaminants, in vitro and pre-clinical studies

Nutraceuticals and foods of interest
gluten, cow’s milk proteins, hydrolized gluten containing food, polyphenols

Fields of application
Celiac disease, food allergy, immunetoxicity of food contaminants
