Research Interest and expertise in the field of nutraceuticals and functional food
Project Manager for the OMICS4FOOD Research and Development Project, funded by the INNONETWORK-POR Puglia FESR-FSE 2014-2020. The project results improved the production processes of fresh food based on flour through approaches based on omics and traditional technologies. The project has been a public-private partnership with Eusoft, as a company Head, Food Safety Lab Srl, Essenza Glutine Srl, Base Pizza Srl, Pasta Apulia Srl and the CNR. The results have been submitted to peer-review journals.

Nutraceuticals and foods of interest
Metagenomics is a tool to enable personalized nutrition. Main interest is to apply and manage omics technologies to improve processes based on biotic interaction (such as fermented foods and probiotic foods).

Fields of application
metagenomics enables to develop tools and guidelines in human and animal nutrition. In this context I have been project manager for INNOMA Project POR Puglia FESR-FSE 2014-2020. Aim of the study has been to analyze the microbiome of syndrome metabolic affected and control subjects. Results are under pubblication
