Research Interest and expertise in the field of nutraceuticals and functional food
Isolation, identification and quantification of nutritional relevant compounds in foods using high resolution methods (e.g., chromatography, electrophoresis, mass spectrometry). Study of process-induced chemical modifications. Identification of food proteins and peptides, with focus on bioactive peptides. Identification of proteins and peptides resulting from in vitro simulated or in vivo gastrointestinal digestion.
