Research Interest and expertise in the field of nutraceuticals and functional food
Research is focused, at the molecular level on different aspects of food from chemo-prevention to diet-related diseases. His expertise is on epigenomics, gene expression control, the role of chromatin modifiers in affecting the transcriptional activity. Scientific interests covers the valorisation of food and food products by studying the bio-accessibility, bio-transformation, and gut transport. His research activity addressed the signature of microRNAs in obesity and metabolic diseases.

Keywords: food and food products, bio-accessibility, bio-transformation, gut transport, in vitro simulated digestion, human intestinal cells, microRNAs

Nutraceuticals and foods of interest
grains, ancient grains, tritordeum, food matrix, food extracts

Fields of application
Valorisation of food, food products, food matrix and extracts, pure molecules, by studying the bio-accessibility, bio-transformation, and gut transport using models of simulated digestion and human intestinal cells. Differential signature of microRNAs in health and disease in vivo.
