Research Interest and expertise in the field of nutraceuticals and functional food
Development of optical methods for real-time monitoring of phytochemicals (carotenoids, polyphenols) of fruits and vegetables based on Raman scattering and portable or handheld devices.

Nutraceuticals and foods of interest
Antioxidant flavonoids such as rutin, quercetin, luteolin, carotenoids in vegetables and fruits. Novel methods based on Raman spectroscopy are currently being evaluated on spinach, olives, etc.

Identification of the nutraceutical and antioxidant content of fruit and vegetables directly in the field or in packaged products, monitoring of oxidative stress conditions
