Research Interest and expertise in the field of nutraceuticals and functional food
Biophysical techniques are used to assess the effect of specific biomolecules, mainly from natural source like hydroxytyrosol and curcumin able to therapeutically influence the aggregation process of amyloid proteins The correlation between the kind and concentration of active biomolecules like polyphenols, contained in extracts from agrofood matrixes, to the molecules ability of counteracting the protein pathological aggregation, allows to valorize the natural source.
